Apple/Raisin Muffins

Ingredients

  • 2 cups farine
  • 2/3 cup sucre brun
  • 1 Tbsp poudre a lever
  • 1/2 tsp muscade
  • 1 oeuf
  • 1/3 cup huile
  • 2/3 cup jus de pommes
  • 1 cup pomme verte, non pelee, en des
  • 1 tsp cannelle
  • 1/2 cup raisins secs
  • 1/2 noix, chopped

Instructions

Mix the dry ingredents, the wet ones in another bowl. Toss together the apple and cinnamon until evenly coated. Stir in the raisins and nuts. Pour the egg mixture over the dry ingredients and fold lightly, to partially combine. Add the apple mixture and distribute evently, using as few strokes as possible (the batter should not be perfectly smooth). Bake 20 - 25' / 400 F.
