Cauliflower Soup

Ingredients

  • 2 cups water
  • 1 -1 1/2 lb chou-fleur
  • 1 oignon, en lamelles
  • 2 Tbsp beurre
  • 2 Tbsp farine
  • 1 cup eau
  • 1 cube bouillon de poule
  • 1/2 tsp celery salt
  • 1/4 tsp sel
  • 1/8 tsp poivre
  • 1 cup creme a cafe
  • muscade

Instructions

Boil the water. Add the coliflower and onion, boil, simmer about 10'. Do not drain. Blend until smooth. melt butter. Stir in flour, cook until smooth and bubbly. Remove from heat. Stir in water, boil and stir 1 minute until it thickens. Stir in coliflower mixture. Add bouillon cube and seasoning. Heat just to boiling. Stir in cream. Heat just until hot. Sprinkle each serving with nutmag.
