Chicken Breast Diane

  • 4 large poitrine de poulet, boneless
  • 1/2 tsp sel
  • 1/2 tsp poivre
  • 2 Tbsp huile d'olive
  • 2 Tbsp margarine
  • 3 Tbsp oignon vert, coupes
  • 1/4 citron, jus
  • 2 Tbsp cognac
  • 3 Tbsp persil, hache
  • 2 tsp dijon
  • 1/4 cup bouillon de poule

Instructions

Pound chicken breast. Sprinkle with salt and pepper. Heat 1 Tbsp of each oil and margarine in skillet. Cook chicken over high heat for 4 minutes on each side. Transfer to warm serving platter. Add green onion, lemon juice and brandy, parsley and mustard to pan. Cook 15", whisking constantly.Whisk in broth, stir intil suace is smooth. Whisk in remaining butter and oil. Pour sauce over chicken.
