Corn Chowder

Ingredients

  • 1 small onion, chopped
  • 3 large p-d-t, baking
  • 1 16 oz cream-style corn, can
  • 1 12 oz evaporated skim milk, can
  • 2 Tbsp beurre
  • sel
  • poivre
  • creme sure, optional
  • shredded sharp cheddar, optional

Instructions

Place onions and potatoes in a pot with water to just cover. Cook until potatoes are soft but not mushy. Drain, reserving potatoe water. Add corn and milk and enough cooking water to make desired consistency. Heat over medium heat. Stir in butter, salt and pepper to taste, Top with sour cream and cheese, if desired.
