Honey Roasted Carrots

Ingredients
- 12 carotte, medium-sized
- 3 Tbsp huile d'olive
- 3 Tbsp miel
- poivre
- 1/2 oignon rouge, chopped
- 1 cup persil
- 1 citron, zeste
- 2 Tbsp huile d'olive
Instructions
Cut the carrots in half lengthwise. Place on a roasting tray. Drizzle with oil, honey, pepper and massage the mixture into the carrots.
380 F - 15', until golden
Place onion, parsley, lemon and oil in a blender and process until smooth. Season with pepper. Serve the carrots with the gremolata, hot or cold.
