Mashed Potatoes with kale and olive oil

Ingredients

  • 3 lb p-d-t, pelees, en gros morceaux
  • sel
  • 4 Tbsp huile d'olive
  • 4 gousses ail, hachees
  • 1 bunch kale
  • 1/2 cup lait, chaud ou half and half
  • poivre
  • 5 oignon vert, haches
  • 1/4 cup parmesan, shredded

Instructions

Place potatoes in a large pot and cover with water. Add salt. Bring to a boil and cook 20', until tender. Drain and place in a large bowl.

Heat 2 Tbsp oilve oil in large saute pan. Add garlic and kale (large stems stripped and discarded, leaves chopped). Saute 4' until softened. Add sauteed kale to bowl with the potatoes.

Mash potatoes and kale together. Slowly add warm milk and combine. Season with salt and pepper; mix just until creamy with a few chunks. Place potatoes in a serving bowl. Make a well in center and pour remaining 3 Tbsp olive oil over top. Sprinkle with green onions and parmesan (optional).
