No-bagel Frittata

Ingredients

  • 1 1/2 tsp beurre
  • 1/2 onion, chopped
  • 4 oz saumon fume, chopped
  • 8 oeuf, lightly beaten
  • 3 oz cream cheese, softened
  • 1 1/2 tsp capres
  • poivre
  • lait

Instructions

Heat oven to 350 F.

In an overproof skillet melt 1/2 Tbsp butter. Add onions and cook, stirring frequently, until soft, about 10'. Stir in smoked salmon and cook a minute or 2 until it changes color. Set aside.

Pour the eggs and milk into a large bowl. Add cream chreese in marble-sized chunks, along with optional capers and pepper. Whisk until just mixed.

Add remining 1 Tbsp butter to skillet and stir to coat the sides. Add egg mixture and place in oven. Bake until eggs are just set, 15-20'.
