Oatmeal Lemon Sugar Cookies

  • 1 cup farine
  • 3/4 tsp baking soda
  • 1/4 tsp sel
  • 1 cup beurre
  • 1 cup sucre
  • 1 citron, zeste
  • 1 tsp lemon extract
  • 1 1/2 cup oatmeal, regular uncooked

Instructions

Try baker's sugar

Whisk together flour, baking soda and salt. Cream butter and sugar until light and creamy (4-5 min). Add zest of lemon and lemon extract. Beat until well blended. Add flour mixture, beating until blended. Add oatmeal.

Line sheets wtih parchment paper.

Roll into balls with spoons or fingers (small!). Dip a flat bottomed glass in water and then in a bowl of sugar and smash the cookies. They really spread out when cooked, so don't put them too close together. Use 3 cookee sheets.

Slip parchment off cookie sheets onto counter to cool.
