Stir-fried Spinach

Ingredients

  • 2 lbs epinards
  • 1 large cilantro, bunch
  • 3 Tbsp huile d'olive
  • 1 grande ail, gousse, hachee fin
  • sel
  • poivre
  • 1/4 Cup Pine nuts, toasted
  • 2 Tbsp citron, jus

Instructions

Wash spinach, chop coarsely and dry thoroughly in a sale spinner. Wash and dry cilantro and chop medium-fine. Heat oil in a large skillet over medium-high heat. Add garlic and saute until aromatic but not browned. Add spinach and saute 2 minutes more, until spinach as wilted.

Add salt and pepper to taste, cilantro, pine nuits and lemon juice and stir well to combine. Serve immediately.
