Ingredients

• 6 beets

Instructions

1. Preheat oven to 375°F.

2. Cut off tops and bottoms.

3. Rub with olive oil.

4. Put on a baking tray with a silpat.

5. Roast for 1-2 hours, until a knife slides in easily.

6. Let cool.

7. Peel, chop, and put some sort of dressing on them.
